Chinese Lemon Chicken

INGREDIENTS : 1) 2 tbsp Dry sherry
2) 4 Green (spring) Onions, chopped
3) 1 Piece of root Ginger, shredded
4) 500gm Chicken, cut into 1 inch strips
5) 2 Celery sticks, slIced
6) 125gm Button Mushrooms, quartered
7) 1 Green pepper, cored, seeded and slIced
8) 2 tbsp Light Soy sauce
9) Shredded rind of 2 Lemons
10) A few Lemon slIces, for garnish
11) 2 tbsp Oil, for stir-frying

How To Cook Chinese Lemon Chicken :
1. Put the sherry, spring onions and ginger in a bowl.
2. Add chicken and toss well to coat. Leave to marinate in the bowl for 15 minutes.
3. Heat the oil in a wok or frying pan.
4. Add celery, mushrooms and the green pepper. Stir-fry for one minute.
5. Add the chicken and marinade and cook for 3 minutes.
6. Stir in the soy sauce and lemon rind. Cook for one minute.
7. Garnish with lemon slices and serve hot.
8. Chinese Lemon Chicken is ready. |
